Pumpkin Carving

The weather here lately has been unseasonably warm. This made it perfect to go out in the driveway and carve pumpkins. This is the first year we have actually carved pumpkins with the girls. In the past it has been decorating with markers and the cahracter kits that you can stick into the pumpkins. Now for the fun picture overload.

Abby trying to figure out if she wants to dig in or not.

My beautiful little girl.

Abby watching while Daddy cuts my pumpkin open. It just wasn't working for me.

Abby showing me how it's done.

Maddie scared that Daddy is going to touch her with "the nasty stuff" lol

Maddie proving that she is brave with a couple of seeds in her hands. Can't you see the enjoyment on her face. haha

Look at this mom!!

My girls showing off their pumpkins. Maddie's was still yellow and solid so there was no scooping it out. Abby scooped hers out (with help) but opted for Buzz Lightyear in the end.

I was the only one going for the 'traditional' pumpkin with a carved face and all. :)

HAPPY HALLOWEEN!

Pumpkin Picking

Saturday we went pumpkin picking at the local farm. This is the same place we go apple picking as well. With our schedule as busy as it is this was the only day we all had to get there. The problem is that it was raining the whole time we were there and super cold. The girls had a blast stomping through the mud. Good thing we brought along rain boots and towels.

At least with all the mud it was easy to spot the bright orange pumpkins.

Maddie was excited to find one that looked like a strawberry.

And another that looked just like a watermelon.

My little Maddie lion excited about the rain.

Daddy and Abby found one they like.

Me and my girls. Cold and happy. :)

Easiest Pumpkin Muffins Ever

I was wondering around Pinterest and I saw pins for pumpkin muffins and cakes that only required 2 ingredients. Sounds too good to be true right? Guess what, it's not. It's the same basic concept as the Pumpkin Brownies I posted about last month.

Since the pumpkin brownies were missing a little something I thought I would add a third ingredient to the pumpkin muffins. All you need is:
 - Yellow cake mix
 - Small can of Pure Pumpkin Puree
 - 1 tsp Pumpkin Spice Mix
Take all three ingredients, dump them all in a bowl and mix. Hand mix, electric mix, doesn't matter. Whatever works for you. Dump it in a lined muffin tin (makes 12) and bake for 20-25 minutes at 350*.
Simple right?!?! Simple to make and delicious is a winning combination in my book.

Pumpkin Brownies

I love fall. I love sweaters and corduroy and everything pumpkin. I was googling a couple days ago for new pumpkin desserts when I ran accross a recipe on the Dr Oz Show website for pumpkin brownies. It sounded delicious and interesting so I thought I would give it a try. The best part is it only has 4 ingredients.

Here's all you need:
1 (15 oz) can prepared pumpkin
2 tsp lemon zest
1 box of brownie mix
3 tbsp peanut butter, softened in microwave
What to do with these ingredients:
 - Preheat oven to 350 degrees
 - Grease an 8x8 baking pan
 - In a large bowl, stir together the pumpkin puree and lemon zest
 - Mix in the brownie mix - just the box mix, no eggs or oil - and combine well. It will be a thick batter. Spread the batter evenly into the baking pan. Put the peanut butter in the microwave for about 30 seconds to soften it. Top the batter in the pan with dollops of peanut butter. You can draw a knife through the dough and peanut butter to create a design. Bake for 25 - 30 minutes. Let cool before cutting.
